Something Green and Good to Eat…My Chia Pet!

Happy Saint Patrick’s Day!

What is everyone doing today to celebrate?  Here’s what’s on my agenda…

  • Wear green!  Of all the St. Patrick’s Day traditions, this is my favorite one, and not just because I don’t want to get pinched!  I love wearing green any day of the year, and I just noted that it is the most popular color in my closet.  Right now, I just counted 14 tops and sweaters ranging in various shades of gorgeous green
  • Enjoy all the beautiful shades of green in my garden.  Here’s a little inspiration…

And last, but not least, I’ll be eating green

Chia green!

Chia seeds seem to be all the rage lately.  And while, I look forward to seeing more research on the many health benefits that are being attributed to chia seeds {i.e. better blood sugar regulation in diabetics;improved hydration in endurance athletes; lowered blood pressure and cholesterol}, at this time, it seems safe to say that these little seeds pack a mighty nutritional punch in terms of fiber, omega 3 fatty acids, and antioxidants.  Just 1 tablespoon of chia seeds provides 60 calories, 5 grams of fiber, 2282 mg omega-3 fatty acids, 3 grams of protein, and is packed with antioxidants.

Here’s how I am enjoying chia seeds on St Patrick’s Day…

Chia Oats -1 serving

  • 1/2 cup oats {Bob’s Red Mill gluten-free oats for me}
  • 1 cup dairy/non-dairy beverage of choice {I used Organic Vanilla Soymilk}
  • 1-2 teaspoons ground cinnamon
  • 1/2 sliced banana
  • 1 Tablespoon Chia Seed

Heat milk/milk-alternative, oats, and cinnamon in pan. Bring to boil, then simmer until done.  Top with sliced banana and chia seeds.

In addition, I will also be trimming Shrek’s “hair” today…

Umm...Can anyone lend a kleenex to Shrek???

…and be adding his lovely, luscious locks to my Simple Sandwich for lunch…

  4. Hi Amy. Thanks for stopping by! This was our first ever Chia Pet, and I have to admit I really get a kick out of seeing Shrek in my kitchen 🙂 The chia seeds are really good. I’ve been sprinkling them on lots of stuff lately. Yesterday we had waffles topped with Justin’s Chocolate hazelnut butter, peanut butter, sliced bananas, and chia seeds. Yum!
