Simple Strawberry Smoothie

My kids have been eating me out of house and home this summer.

And, one of the first things we always run out of, is fresh fruit.

Now, I’m definitely not complaining…

As a certain well-know Martha would say,

That’s a good thing!

It’s just that I’m not too keen on running to the store EVERY day to buy more fruit…

Thank goodness for frozen organic fruit!

When I’m out doing my regular grocery shopping, I always peruse the freezer section to see what’s on sale and then stock up.  Each store I usually shop at typically has some sort of special for frozen organic fruit going on, and it’s often half price.  Can’t pass that up!

Yesterday, I found a bunch of frozen organic strawberries that fit the bill for a simple smoothie.

These frozen strawberries make a great snack all on their own!

And, let me tell you, smoothies have been in order this week for my youngest one, Big Tex, who has been putting in LONG hours at both baseball camp {9a-3p} and football practice {5p-7:30p} every day this week.

I’m trying to be a good dietitian mom and keep him well-hydrated and well-nourished during this grueling week, and this simple strawberry smoothie fits the bill.

Here’s the recipe…

Simple Strawberry Smoothie

  • 1 cup coconut milk
  • 1 cup frozen strawberries
  • 1 scoop whey protein powder {I use Designs For Health Whey Cool Powder}
  • 1 Tablespoon chia seeds
  • Sweetener of choice {I used Nu Naturals liquid stevia}

Throw it all in to a blender, pour it in to a cup {or two} and enjoy!

 

Big Tex and I both enjoyed our smoothies yesterday  in between his baseball camp and football practice.  

When he got home from football, he told me he was one of the fastest runners of the day, so I guess it helped :-)

I know I enjoyed my smoothie, and I’m pretty sure he enjoyed his…

  2. Why chia seeds? Did the blender pulverize them along with the seeds found in the strawberries? Don’t some people think seeds can aggravate diverticulitis? Your thoughts please.

    • Great questions! I added the chia seeds for an extra nutritional boost. Chia seeds are a good source of both omega-3 fatty acids and antioxidants. 1 tablespoon also provides 5 grams of fiber and 3 grams of protein. in addition, preliminary research shows they may help improve blood sugar control in diabetics, help with hydration in endurance athletes {they form a gel when soaked in water}, and may lower both blood pressure and cholesterol. You can still taste a little “crunch” in the smoothie, but if you let it sit for awhile, the chia seeds will start to gel and have a smoother texture. Personally, I don’t mind a little crunch in my smoothies! As far as diverticulitis goes, there has been some change of thought regarding seeds in the diet with some GI docs thinking they might even be beneficial.   7. The smoothie sounds great! And, yes, I keep frozen fruit in the freezer at all times. I also often freeze fruit myself.

    The toddler just finished a gymnastics camp. He certainly got lots and lots of exercise and was quite hungry!

    • Hi Roz! Glad you like the dessert glass. It is actually 1 of 2 Waterford crystal bowls that were a wedding gift from my mother and father in law. I like using it to take photos, but don’t typically serve my kids frozen fruit out of these bowls :-). Hope you had a wonderful weekend!

    • Thanks Kristen :-). The coconut milk gives the smoothie a little extra creamy taste. I usually alternate the “milk” I use in my smoothies between coconut, almond, and vanilla. Love variety!

  11. Love a smoothie, interesting I use coconut water a lot/almond milk but coconut milk a good idea. Is the whey you mentioned organic?

    • Hi Lauren! The Designs for Health Whey Cool Powder is not certified organic, but is a non-denatured whey that comes from milk from grass-fed cows that graze on “pesticide-free and chemical-free natural grass pastures.” Also, “the cows are never fed grain or subjected to any growth hormone treatment, chemicals, antibiotics, GMOs, hyperimmunization or injected pathogens.” I like the Designs for Health products, including their supplement line. Hope you give the coconut milk a try :-) Coconut water in smoothies sounds good too!

  13. I don’t have kids quite yet, but we just got a second fridge for our garage so we are prepared to stock extra foods once we do!! I know it won’t be for a while, but I sitll buy extra foods when they are on sale, now that I have the space. Nick and I are huge fans of frozen fruits and veggies. They are so convenient and always taste fresh!

  14. Great idea to use coconut milk in your smoothies. I normally use almond milk or a little OJ depending on what other fruits I am using. Smoothies are a regular beverage in my house! I’ll try the coconut milk once I buy some from the grocery store.

  15. yum. love this. although, I’ve been even simpler and have simply been freezing grapes and noshing on them in the late afternoons as a snack….and the kids love them too since they’re sweet and aren’t as filling as smoothies!
