These Easy Gluten Free Meatloaf Muffins with Turkey or Beef, hit the spot when you want a nourishing and delicious meal, the whole family will love!
Before I share my gluten free meatloaf muffin with you, let’s talk about multi-tasking, as in how much multi-tasking can you accomplish in 3 hours when you put your mind to it??? Here’s what I can do…
- Pick my kids up from school
- Drive 20 minutes North in Friday afternoon traffic to Sports Authority for SiSi to pick out shorts for soccer practice {Never mind that she had 3 perfectly fine pairs of shorts the day before that magically disappeared. Hmm…}
- Run over to nearby Party City to get helium balloons, plates, and napkins for SiSi’s birthday party dinner the next day. Wait in line for 15 minutes so the woman who sneaked in just in front of me can get 22 of her own helium balloons filled. Doesn’t she know I have a soccer practice to get to???
- Drive 25 minutes South in Friday afternoon traffic to drop SiSi off at her soccer practice.
- Drive another 12 minutes home {yes, I timed it}, to drop off SiSi’s friend so she could make it in time for her own soccer practice.
- Mix ingredients for gluten free meatloaf muffins, and plop the mixture in the fridge.
- Drive another 12 minutes to pick up SiSi from soccer practice before returning home to put the mini meatloaf muffins in the oven and crack open a bottle of wine to share with my friend V. who stopped by to chat.
Multi-tasking aside, these gluten free Meatloaf Muffins were inspired by a recipe in No Whine With Dinner . And, although my kids are teenagers now, this book is still one of my favorite family friendly cookbooks.
Nutrition Notes, Tips, & Serving Suggestions for Gluten Free Meatloaf Muffins
- I made my muffins with grass fed ground beef, but they are also delicious with ground turkey.
- You can make these gluten free meatloaf muffins with oats, bread crumbs, or a nut crumb mixture for a paleo version. If you use oats or the nut mixture, you’ll bump up the fiber in the muffins, and they’ll still taste delicious! Note: For those of you on a gluten-free diet, make sure you use certified gluten-free oats.
- The tomato paste and shredded carrots give these muffins an extra dose of healthy antioxidants from lycopene and beta carotene. Bonus: Kids AND Adults love the taste too!
- Serving suggestions: Mashed or roasted potatoes always go well with meatloaf IMO. And, add some veggies like roasted carrots, sauted asparagus, or steamed broccoli to round out your meal.
- These gluten free meatloaf muffins are great for dinner, but also can be meal prepped ahead of time, then frozen and defrosted for an easy lunch for yourself or the kids.

It’s So Easy to Make Gluten Free Meatloaf Muffins. Here’s how…
- Make the filling
Combine eggs, tomato paste, spices, and gluten free oats or breadcrumbs.
- Combine filling with ground turkey or grass fed beef.
Mix all ingredients together well, and place meatloaf mixture in silicon muffin molds. Tip: You can pre-grease them, but I also experimented without, and there was no sticking whatsoever. Like magic!
- Bake
Bake gluten free meatloaf muffins for 25-30 minutes, or until thermometer registers 160 degrees F. Then allow to cool and serve with ketchup, marinara, or hot sauce if desired. You can also eat them straight from the muffin cups!
Easy Gluten Free Meatloaf Muffins
Ingredients
- 2 large eggs
- 1 6- ounce can tomato paste
- 1 teaspoon dried Italian seasoning
- 1/4-1/2 teaspoon salt, use 1/4 teaspoon if using bread crumbs with added salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 cup gluten free oats, or gluten free breadcrumbs or nut mixture
- 1 large carrot, grated, ~1 cup
- 1/3 cup grated Parmesan cheese
- 1 1/4 pounds turkey, or grass fed beef
- Optional, marinara, ketchup, or hot sauce to top off with before serving.
Instructions
- Heat oven to 375 degrees F. Lightly grease 12 muffin cups or 12 silicon baking cups with vegetable oil/cooking spray and set aside.
- Whisk the eggs, then mix in tomato paste, Italian seasoning, salt, pepper, onion powder, and garlic powder in a large bowl until combined. Stir in the oats or bread crumbs, carrots, and Parmesan cheese.
- Mix in the ground turkey or beef, using your hands to combine well, then divide the meat mixture evenly among the muffin tins/silicon cups.
- Bake for 25-30 minutes, or until an instant-read thermometer registers 160 degrees F.
- Cool before serving with optional marina, ketchup, or hot sauce.
