Well I wasn’t sure I could make raw maple cinnamon oatmeal raisin maple pecan cookie dough any better than it already was.
But, you know what?
I did.
And if you like ice cream, and you like oatmeal raisin cookies, you will LOVE this Oatmeal Raisin Cookie Dough Ice Cream.
There’s really not much to say about this creamy, oatmeal raisin cookie studded dish of deliciousness other than this…
You.MUST.make.it.
Trust me.
Here’s the recipe…
Maple Cinnamon Oatmeal Raisin Cookie Dough Ice Cream {gluten-free and vegan}
- 1 batch Raw Oatmeal Cinnamon Raisin Maple Pecan Cookie Dough, chopped in to small chunks
- 2 14-ounce cans coconut milk {preferably full-fat}
- 3/4 cup maple sugar OR organic cane sugar
- 2-3 teaspoons cinnamon, or to taste
- Combine coconut milk, sugar, and cinnamon in a blender and mix until smooth.
- Chill coconut milk mixture in refrigerator.
- Make ice cream following manufacturer’s directions for your ice cream maker. I use a Cuisinart and got soft serve consistency ice cream after 20 minutes.
- Mix cookie dough chunks in to ice cream. Place ice cream mixture in glass container, and place in freezer until desired consistency is achieved.

My roommate uses the ice cream maker ALL the time. Last night he whipped up some soy Chocolate/PB ice cream which was delicious. I am sending this recipe for him to make so that I can enjoy it without even lifting a finger!!

Yum! Looking forward to your next newsletter! I bought my Cuisinart ice cream maker last summer, and it was a fun investment. The one I have is under $60, and I have thought “Why didn’t I get one sooner?”. That being said, I spent a lot more money for my Vitamix last year, but I use to pretty much everyday ( and I’m still on my same Cusinart Food Processor from when we got married over 12 years ago, which gets used several times per week). So, to me, I’m glad I bought my ice cream maker and the kids love it too, but not sure I consider it a “must have” like my Vitamix and Food Processor.
