Bailey’s Irish Cream Cheesecake {Original and Gluten-Free} for #NellysBigDay

I’m so excited to be celebrating a special occasion with you all today, and I hope you will join myself and all the other fun and fabulous bloggers in celebrating #NellysBigDay today with a virtual Bridal Shower for my lovely blogging and Twitter friend,  Marnely Rodriguez of Cooking With Books.

Here’s how it all started…

“And …I said YESSSSS!”
It happened one November midnight, in Twitterverse, we saw this tweet from our dear Nelly @nella22. Without missing a beat, we all knew Nelly had “said YES” to her beloved “M”,as she sweetly calls Brian Murray, her fiancé. So here we are,Nelly dear, your friends in the food world, wishing you and Brian, all the best.
In honor of Nelly and Brian’s big day, I knew I had to make something fun and decadent to eat, as I suspect that is the way Nelly, a super fun, and dare I say decadent lady herself, would want to celebrate.
I racked my brains trying to come up with the perfect dish to bring to the bridal shower, when finally it came to me…

Baileys Irish Cream Cheesecake!

This is the very same cheesecake I made for my best friend at her bridal shower several years ago, and it’s the same cheesecake I’ve come back to again and again because it is just.so.good.

Yes.

Just.SO.good.

The original recipe comes from Bon Appetit magazine, and I have adapted it to be gluten-free {so I can enjoy a slice with Nelly} and include a chocolate crust {because every bride should enjoy a little extra chocolate at her shower!}

Baileys Irish Cream Cheese Cake {Original and Gluten-Free}

Crust

Preheat oven to 350 degrees.  Finely grind cookies in food processor. Add melted butter and process until well combined.  Press crumb mixture onto the bottom of a 9 inch springform pan.  Bake crust for 12 minutes, then remove from oven to cool.

Filling

  • 3 8 ounces packages cream cheese, room temperature
  • 7 tablespoons sugar
  • 1 tablespoon all purpose flour {I used 1 tablespoon sorghum flour for my gluten-free version}
  • 2 large eggs
  • 1/4 cup plus 2 tablespoons Greek Yogurt {I used 2 %}
  • 1/4 cup plus 2 tablespoons Bailey’s Original Irish Cream liqueur
  • 1 teaspoon vanilla extract

Combine cream cheese and sugar in a large bowl with an electric mixer until smooth.  Beat in flour.  Add eggs one at a time, beating until just combined.  Mix in remaining ingredients.  Bake 10 minutes at 350 degrees, then lower heat to 250 degrees and bake for 30 more minutes, or until cheesecake is done.  Cool and refrigerate.

Glaze

  • 1/2 cup whipping cream
  • 9 ounces semisweet chocolate, chopped

Heat cream in saucepan until simmering.  Reduce heat to low and add in chopped chocolate.  Stir until melted and smooth.  Cool glaze to lukewarm.

Release pan sides from cheesecake and place it on a baking sheet or large plate.  Spread glaze on top and on the sides of the cheesecake, allowing excess to drip on to baking sheet or plate.  Refrigerate until glaze is set, approximately 30 minutes.

Enjoy my dear friend Nelly, and many congratulations to you and Brian on your special day! xoxoxo

And, before I leave you, I have just a few words of wisdom to share with you for what I think makes a successful marriage…

  • Love and support each other always, but make sure to allow yourselves “breathing room” to fullfill your own dreams.
  • Laugh together.
  • Laugh together a lot!
  • Surprises {Good ones!} NEVER go out of style
  • And NEVER forget the coffee in the morning!!!

Cheers Nelly!!!

And, of course, no bridal shower is complete without the guests, so please make sure and check out all the other yummy treats and words of wisdom from Nelly’s friends!

And, a HUGE thanks to: Sanjeeta KK at Lite Bite for coordinating all the festivities and being a super host…to Heather of Farmgirl Gourmet for designing the beautiful logo…to Elizabeth of Queen’s Notebook for her lovely intro…and to Junia at Mis Pensamientos for her computer prowess!

What would you bring to eat a bridal shower?  If you are married, what do you remember about your own shower?  What words of wisdom do you have to share with the bride and grooom???
