{Almost} Wordless Wednesday: Pecan Coconut Muffins

I hope you’re all having a fabulous week so far!

I made these AMAZING Pecan Coconut Muffins {kept all the ingredients the same except used melted virgin coconut oil in place of the butter} by Carrie Vitt of Deliciously Organic yesterday, and I pinned the original recipe image on to my Pinterest Board, {Delicious} Recipe’s I’ve Made.  Check it out for more delicious inspiration!

  10. Thanks for the shout out, it does work sometimes with a little tweaking but certainly good in a pinch. These look great, I have on my weekend list to check out pinterest, I’m “interested”.

  12. That is simply gorgeous! And I did go to the recipe link ;-). You know I always have Almond Meal! So happy to finally sitting down in front of my laptop to catch up with friends!

  13. I’ll have to check out Lauren’s post, because I’ve never had good luck poaching eggs.

    Over the weekend I cooked maple salmon, using real maple syrup. It was SUPER SIMPLE, and so delicious! I Also coked cornbread. Yeah, so random, but had to have it with some chili we had.

    The muffins sound wonderful. I can’t eat coconut, but Nick loves it.
